This brew never ends.
Last week's ferment is still alive and bubbling, so today I'm using a pour of it to wake up the next batch. A little of the old culture seeds the fresh apples, the same way a sourdough starter gets carried on for years. Then I top off last week's tote, feed it more rescued apples, and let the living culture do the work.
Seven to ten more days, then we strain the solids and it's ready to feed the soil.
Nothing bought. Nothing wasted. One living culture, carried forward week after week, turning landfill apples into life for our farm.
