Pulled the spent solids from the ferment today and sent them straight to the compost pile. The bacteria took the sugars, the compost takes the rest, and nothing from these rescued apples ever sees a landfill.
Two things this batch taught us. First, keep the greens out of an early ferment. We learned the hard way that fresh green material throws a young culture off balance before the lactobacillus has a chance to take over, so now we hold the greens and let the sugars lead. Second, chop or grind the apples harder than you think you need to. Whole and halved pieces trap a lot of sugar inside where the bacteria can't reach it. Break them down small and you hand the culture way more surface to work with, which means a faster, fuller, more complete ferment.
Every batch teaches us something, and every scrap goes back to the farm.
