Lactic acid bacteria are anaerobic, so they turn fruit sugar into lactic acid, drop the pH, and let the good microbes beat out the rot. The apples ferment clean instead of going foul, and because apples are loaded with potassium you end up with a living liquid fertilizer plants love for flowering and fruiting.
